Chili SPAM and Eggs

Add texture and taste to chili and eggs with SPAM, and mop us all those delicious tomato juices with crusty bread. This dish may be simple, but it's a real treat to come home to, so make a batch for your family.

Servings: 4

Total Time: 35mins

Ingredients:

• 2 tbsp rapeseed oil

• 1 onion (peeled and chopped)

• 7 ounces SPAM (diced into ¼“ squares)

• 1 green bell pepper (seeded and cut into chunks)

• ½ tsp cumin

• 1 tsp coriander

• 1 (14 ounce) can chickpeas (drained and rinsed)

• 2 (13 ounce) cartons crushed tomatoes with chili

• Freshly ground black pepper

• 5 ounces water

• 4 eggs

• 2 large handfuls sharp Cheddar (grated)

Directions:

1. Over moderate heat, in a large pan, heat the oil.

2. Add the onion to the pan and fry gently for 2 minutes, without browning.

3. Slide the onion to one side of the pan and add the SPAM, frying until golden on all sides.

4. Next, add the green pepper and fry for an additional 3 minutes to combine.

5. Add the cumin, coriander, and chickpeas and heat through for 60 seconds.

6. Add the tomatoes, black pepper, and water. Cover with a lid and simmer for 10 minutes.

7. Arrange the eggs on top of the chili.

8. Sprinkle over the grated cheese.

9. Replace the lid and cook for approximately 10 minutes, until the eggs are opaque.

10. Serve the chili with chunks of crusty bread, and enjoy.
